Preface

Few years have elapsed using the first and the second editions of this textbook by the authors and many colleagues in Jordan and other Arab countries. It has been of great help for both the students and the instructors in the practical part of clinical nutrition and diet therapy courses. The authors have received feedback and many suggestions and comments on the material presented. Thus, it was found necessary to modify the text as it is now in this third edition.

While the structure of the third edition retains the organization of the first 2 editions, it was modified and improved taking into consideration the need for adding few new cases. The reader will find modifications including addition of one new case in rheumatic diseases (unit 10), which is on systemic lupus erythromatus (case 22) and a new unit on adverse reactions to food (unit 12) with a case on milk and egg allergy. Thus, 2 new cases were added to have a total of 24 cases. The title of case number (10) “hepatic encephalopathy” has been changed to “hepatic cirrhosis and encephalopathy” to show the importance of cirrhosis in the etiology of hepatic encephalopathy.

The material has been reviewed and updated: many printing mistakes have been corrected and many internet sites and references have been added. Additionally, the regulations and instructions of the nutritional profession licensing in Jordan were retained (appendix 8) in Arabic. We also thought that it is necessary to include a new appendix (appendix 10) on the accreditation standards issued by the Commission on Accreditation for Dietetics Education/American Dietetic Association, as it is important to know the theoretical and practical requirements of this profession.

We hope that this new edition will be of much help to students and instructors of dietetics and clinical nutrition. We will be grateful for further notes and comments from readers and colleagues that improve the material of this book and upgrade its quality.
